Thick, chewy, homemade granola bars

in: Food & Mealtime

via smittenkitchen.com

Getting enough calories into my daughter has been a challenge ever since she started eating. She eats tiny amounts, so I'm always on the lookout for nutrient- and calorie-dense foods that are easy to take along.

Score! The chewy granola bar recipe at Smitten Kitchen is easy, delicious, and economical. My first attempt contains almonds, cranberries, coconut and mini M&Ms. YUM. Good for the lunchbox and breakfast on-the-go.

We made a batch of these guys yesterday and they turned out super! Next time I’d cut back on the sugar a bit – they seemed a little like a cookie bar! But they’re very tasty and the recipe is super-flex.

Agreed. I used the min amount of sugar, and they were more than sweet enough. I LOVE these bars. Possibly more than the kids.

I have also found that cutting them into bite-sized pieces (little cubes) controls portions and keeps crumbling to a minimum.

Thanks! Great recipe – I made these today for my neighbor with a brand-new baby. Great one-handed snack, plus a galatagogue! (Helps with milk production). Bonus, I got rid of 6 almost empty bags of granola:)
